It’s spooky ooky pie season! Here’s the recipe.

2.5 cups flour and more for rolling
1 teaspoon salt
6 Tablespoons (85g) unsalted butter chilled and cubed
2/3 cup vegetable shortening, chilled
1/2 cup ice cold water
1 teaspoon white vinegar or vodka

Sift dry ingredients together, rub in butter and shortening until it looks like bread crumbs. Add vinegar or vodka and just enough water to bring the dough together. Don’t overwork. Leave in the fridge for 20 minutes.
Line a greased pie dish with half the dough and make filling.

2.5 cups chopped strawberries
3 cups chopped rhubarb
1/3 cup brown sugar
1/3 cup white sugar
1/4 cup of cornstarch
1 teaspoon vanilla
1 teaspoon lemon juice

Mix filling ingredients together and spoon into pie crust. Dot with a tablespoon of butter cut into cubes.
Roll out the rest of the dough and place it on top of the pie. Create your own pie Monster.
Brush the crust with egg white.

Bake at 420F for 15 minutes and then reduce to 400f for 25 minutes.
